- 4 cups mashed sweet potatoes
- 1/2 cup butter
- 1/2 or 1 cup sugar
- 1/2 cup milk
- 3 eggs
- 1/2 tsp nutmeg, cinnamon
- 1 tsp vanilla
- Take the butter out of the fridge to let it come to room temp
- You can either peel and boil the potatoes till soft, or roast them until soft.
- Mix the sugar and spices
- Cream butter and sugar and spices
- Separate the eggs
- Add egg yolks to the butter and sugar mix and beat
- Stir in potatoes, milk, and vanilla
- Beat egg whites to soft peaks and fold into mix
- Pour into a pie crust and bake for about 45 minutes to an hour or until the center is firm @ 375
